Kisir Turkish Burgul Salad

Well, this refreshing salad is originally from Turkey, Kisir is generally made with inhouse ingredients which makes this dish very convenient to make for an unexpected guest, it is a great side dish or you can eat it alone for dinner, my husband and I love to make this recipe once a week if we can. A quick note, We love it when it’s cold so we make sure to prepare it ahead of time so when its time for dinner it will be cool and chill plus it’s great when you serve it with hot red tea!
This recipe is very easy once you prepare everything, so prep time will be around 20 minutes with no cooking.
Cooking time: 0 Minutes
Serving: 4 people
200 g fine bulgur
2 tablespoons tomato paste
Salt and pepper
½ teaspoon of red pepper powder
1 large lemon
2 tablespoon pomegranate molasses
¼ cup of olive oil
1 finely chopped onion
1 pack of finely chopped parsley
2 finely chopped tomatoes
2 finely chopped pickles
A handful of freshly chopped mint leaves or 1 tablespoon of dried mint powder
Boil 1 liter on the water in a kettle, then pour in over the fine bulgur in a big bowl. You need the water to cover all the bulgur plus 3 cm extra, now cover it with a clean kitchen towel, and let it sit for 20 min.
In the meantime start chopping your veggie ( it is extremity crucial to cut them very fine)
On the other side bring a small bowl and mix all your spices and liquids. Bring the olive oil, lemon juice pomegranate molasses, tomato paste, salt, pepper, and red pepper powder.
Once you finish chopping all that the 20 min should be finished and your bulgur is ready, lets get started with the last step, bring all the diced veggies into the bulgur bowl and mix all together very well, don’t be shy and use your hand if you need to. Moving to the fun part, bring the sauce mix and pour it all into the big bowl and mix till color change to light red because of the sauce.
Off to the fridge
Go ahead and leave your kisir Turkish Bulgur salad in the fridge for at least 20 minutes before eating, but as I said on top I like my salad cold so if it was me I would wait at least 2 hours.
